Coconut is one vital ingredient of the Goan Cuisine. There are two varieties of it available in Goa, one
is with a red outer shell and other with a Green outer shell. The experiment here is to explore the
Goan cuisine, relevance of coconut in it and the story behind each dish is also unravelled along with
it. The food show happened at Art Park and saw the participation from a wide range of Goan

Odette Mascaranhas is a food historian, author and Television host. She is also one of the well-
known food critics. She had worked as food and beverage manager at Taj Group of hotels. She has
nine books to her name and has extensively written on Goan Cuisine.
